Whoopie Pies

Welcome back to our kitchen here at The Waking! We are baking up a delicious and fun sweet treat for you guys today. On our menu are Whoopie Pies! I hope you brought your sweet tooth with you. Enjoy! 🙂

Whoopie Pies:

Whoopie Pies are something that Krystal and I (Cecily) grew up eating; they are a yummy treat that our mom and our aunts would make that would send all us kids into a frenzy when we saw the big cream filled cakes! It often amazes us when we find people who don’t know what a Whoopie Pie is lol, but it seems like it is very common so we will give you the “411”; Whoopie Pies are mini cakes if you will, somewhat like an oatmeal cream pie, but instead of a cookie it is cake. They have a fluffy cream filled center that is sure to send you to the moon from a sugar high! (Yeah baby!). Today we are sharing our recipe that we got from our aunt years ago for a chocolate cake and white cream filling, but the great thing about Whoopie Pies is that they can come in many different varieties, so you could also mix some peanut butter into the filling for a yummy change, or go ahead and use your favorite cake flavor and mix and match fillings! Yay for variety! Anyway you choose to make them, Whoopie Pies are sure you make the kid in you run around in circles and giggle! Cheers friends!

1 cup Crisco
2 cups sugar
2 egg yolks
2 whole eggs
1 cup cocoa
1/2 tsp. salt
4 cups flour
2 tsp. vanilla
1 cup buttermilk
1 cup hot water 2 tsp. soda

In a large bowl, mix together first 4 ingredients. Add the dry and liquid ingredients, mix well. Drop by spoonful (an ice cream scoop works great) on cookie sheet. Bake @ 450 for 5 minutes, let cool.

Filling:

1 1/2 cups shortening
3 cups powdered sugar
1 1/3 cups marshmallow cream
dash of salt
1 tsp. vanilla
1/3 to 1/2 cup milk

With mixer, combine all ingredients except milk and beat well.  Add just enough milk to achieve creamy consistency. Spread filling between cookies and devour!
