This week in Someone’s In The Kitchen, we’re whipping up a couple snacks for you guys; a cheesy savory dip and a chocolaty treat. On our menu is Buffalo Chicken Dip & Homemade Peanut Butter Cups! These are recipes that are really quick and easy to put together on a weeknight when you’re just looking for something special. Buffalo Chicken Dip
If you love Buffalo Wings then this spicy Buffalo Chicken Dip is for you! We made this dip for a little snack and let me tell you, it was delicious with tortilla chips! Cream cheese, ranch, and blue cheese dressings make it really smooth & creamy. And the wing sauce gives it a spicy kick. Although it calls for 1/2 cup of wing sauce, I put only put a few tablespoons and it was spicy enough for me. This cheesy, spicy dip is great with chips or crackers, and is a perfect alternative to the normal cold dips.
8 oz. cream cheese
3/4 cup blue cheese dressing
3/4 cup ranch dressing
2 boneless chicken breasts, cooked and shredded
1/2 cup Frank’s® RedHot® Buffalo Wings Sauce or Original Cayenne Pepper
1 cup shredded cheddar cheese
Princess Heritage® Stainless Steel Nonstick 3 1/2-Qt. Saucepan w/Lid
Pavillion™ Square Baker
Preheat oven to 350°F. Mix cream cheese, blue cheese dressing and ranch dressing in Nonstick 3 1/2-Qt. Saucepan. Heat and stir until smooth and creamy. Stir in chicken and hot sauce. Spoon mixture into Square Baker and sprinkle with cheese. Bake until golden and bubbly, about 30 minutes. Serve with tortilla chips. Serves 8.
Homemade Peanut Butter Cups

These Homemade Peanut Butter Cups are so quick & easy whip up, and trust me, they are way better than store bought. The peanut butter in the middle is so rich and creamy, and the thickness of the chocolate compliments it perfectly.They are rather sweet so next time we make them we want to use mini candy cups, because a little bite of these go a long way. We also decorated ours with pretty sprinkles. Try these Homemade Peanut Butter cups and you’ll be telling the store bought ones bye bye!
1 cup creamy peanut butter, divided
4-1/2 teaspoons butter, softened
1/2 cup confectioners’ sugar
1/2 teaspoon salt
2 cups (12 ounces) semisweet chocolate chips
4 milk chocolate candy bars (1.55 ounces each), coarsely chopped
Colored sprinkles, optional
In a small bowl, combine 1/2 cup peanut butter, butter, confectioners’ sugar and salt until smooth; set aside. In a microwave, melt the chocolate chips, candy bars and remaining peanut butter; stir until smooth.
Drop teaspoonfuls of chocolate mixture into paper-lined miniature muffin cups. Top each with a scant teaspoonful of peanut butter mixture; top with another teaspoonful of chocolate mixture. Decorate with sprinkles if desired. Refrigerate until set. Store in an airtight container. Yield: 3 dozen.
