Ah Pancakes… the food that defies breakfast by being just as delicious for lunch, dinner, or even a snack! Yes, this edition of Someone’s In The Kitchen is devoted to: pancake love! What makes these fluffy, golden brown, little cakes so delightful? Well I think the answer lies in versatility. You can put almost anything in or on a pancake and make it taste great. We have two very versatile and delish pancake recipes for you today. One recipe is more traditional with a little twist and the other … well let’s just say is a bit out of the norm: Oatmeal Pancakes and Red Bull Pancakes! Now, let’s eat shall we? 🙂
Oatmeal Pancakes –
I’m not kidding when I (Krystal) say this is possibly the best pancake recipe I’ve ever tasted in my life. Cecily made these Oatmeal Pancakes for dinner a few weeks ago and I was hooked. They taste like a warm, just out of the oven, oatmeal cookie! She made a couple adjustments to this already delish recipe that made it even more amazing… a generous sprinkling of chocolate chips, brown sugar, & vanilla in the batter, a brown sugar/caramel glaze (recipe below) and whipped cream to top them off! Yeah… this is for people with a serious sweet tooth (like us) and is not for the faint of heart. 😉 But if you’re in the mood for a pancake that’s more like a dessert, than they just might be your dream pancakes.
2 cups rolled oats
2 cups buttermilk (Substitute Sour Cream or Yogurt)
1/4 cup butter, melted
1/2 cup flour
2 tablespoons sugar
1 teaspoon baking powder
2 Tbsp. brown sugar
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 tsp. vanilla
1-2 cups chocolate chips (add to your liking…meaning the whole bag ;P)
Combine oats and buttermilk. Refrigerate overnight. Add two eggs. Add melted and cooled butter. Mix in separate bowl: Flour, sugar, baking powder, baking soda, cinnamon and salt. Stir flour mixture into oat mixture until moist, and add chocolate chips.
Preheat griddle and then dollop about 1/4 c of batter for each pancake.
Brown Sugar/Caramel Glaze –
Cecily was trying out a recipe for a brown sugar glaze she found online but it just didn’t turn out right. So when trying to figure out what else to do; we came up with this yummy glaze. It’s really easy and quick to whip up. It just makes the pancakes even more delightful, it’s a little sweet…make sure to drizzle with care. 🙂
1 stick butter
1/2 cup brown sugar
1 cup plus 2 Tbsp. powdered sugar
1 tsp. vanilla
In a small sauce pan melt butter and brown sugar together, on medium-low heat, until it dissolves and turns a caramel color. Remove from heat, whisk or beat in powdered sugar until smooth and desired consistency is reached. Stir in vanilla. Drizzle over pancakes and devour!
Red Bull Pancakes –
Red Bull Pancakes…yes you heard it right my friends! It is no secret that I (Cecily) am a crazy Red Bull freak, it’s the only drink that makes me swoon…if they sold Red Bull as a men’s cologne, I would jump every guy wearing it! (Yeah I said it! lol). I got the idea of Red Bull pancakes from none other than Mrs. Lenay Dunn, wife of Jason Dunn (Hawk Nelson) and host of MTV’s 10 on top, as well as various Youtube videos. In one of her video’s Lenay had once mentioned putting the drink (whose company she used to work for) in pancake batter, “genius!” I said, and I vowed to make them as well, after a little experimentation in my good ‘ol kitchen, the Red Bull Pancake was born! *angels sing*.
This pancake takes your basic pancake base, infused with a little brown sugar, and instead of using the normal butter milk for the liquid, it is replaced with Sugar-Free Red Bull (you can use regular if you choose, Sugar-Free is just my favorite. Note that the flavor you get with regular might be different though). I have to say, these hot cakes are sooo lovely! The taste you get is one you might not expect; the RB gives the cake a nice and lovely fruity flavor and a tropical taste! Yum! They are light and fluffy, and the brown sugar and RB together give it sweet but not overly sweet kick. Even if you don’t like RB you will probably love these pancakes, Krystal absolutly hates RB, but tasted the pancakes and thought they were great! These pancakes with their fruity and sweet flavor are the perfect energy kick for sleepy mornings; they will awaken your taste buds as well as your mind! Oh Red Bull, how I love you!
1 cup flour
1 tbsp. brown sugar
3 tbsp. oil
3 tsp. baking powder
1/4 tsp. salt
Half a can of regular sized Sugar Free Red Bull
Whisk all ingridients except the Red Bull together in large bowl. Once ingredents are mixed, gradually pour in the Red Bull and mix well. Batter will be thin. Pour 1/3 cup onto hot pan or griddle, cook until tiny bubbles form around edges then flip and cook other side. Once pancake is done spead on butter, and top with syrup.
